Kueh Tikus stir-fry with pork and egg plant in curry powder is a home-style recipe, and is absolutely flavorsome and zesty.
Ingredients and Preparation for 4
- garlic - 5 cloves - sliced
- onions - 1/2 large size - sliced
- ginger - medium size - thinly sliced
- chili - 3 pcs
- green onions / scallions - diced
- egg plant - 1 large size - thinly sliced
Prepare -
- pork - 1 lb - sliced
Prepare -
- Kueh Tikus (flat rice flour noodles)
Cooking Steps
Add 3 tbs curry powder. Continue stirring.
Add pork and continue stirring.
Add egg plant and combine well.
For flavor, add:-
- 3 tbs chicken stock brand,
- 2 tbs fish sauce
- 1/2 tsp black pepper
Cover with top, and leave to simmer for 5 minutes over low heat.
Continue stirring.
Add Kueh Tikus (flat rice flour noodles) and combine well.
Add green onions / scallions.
Ready for serving.
