Tapioca flour sticks stir-fried with egg plant and pork in mushroom sauce is flavorsome and delicious.
Tapioca stick is like Rice flour stick and when blanched is sticky. When cooked with egg plant and pork, water is added to improve the stickiness texture.
Ingredients and Preparation for 4
Prepare tapioca flour stick.
Prepare - 2 tbs garlic (sliced). 1/2 large onions (sliced), 1 cup carrots (sliced), 1 cup parsley (sliced), 1/2 cup bell peppers (diced). 1 cup bean sprouts, 1 large egg plant (sliced).
Cooking steps
Begin, by blanching tapioca flour sticks.
Begin, by saute garlic, onions and chili in 5 tbs cooking oil in a large skillet in medium heat until fragrant.
Add pork meat and continue stirring and frying.
For flavor, add:- 3 tbs mushroom sauce, 3 tbs pork stock brand, 1/2 tsp pepper.
Cover with top, and leave to simmer for 10 minutes over medium heat.
Add egg plant and carrots.
Cover with top, and leave to simmer for 3 minutes over medium heat.
Add blanched tapioca sticks.
Combine well with egg plant and pork.
Add bell peppers, bean sprouts and parsley.
Add 2 cups water. Taste to flavor by adding mushroom sauce and pork stock.
Ready for serving.
