This is a cuisine of East meets West.
When we live in a household with two cultures under the same roof, we have to be creative sometimes in preparing meals. My son grew up with having lemon chicken whereas the others grew up with American fast foods. In this recipe, I incorporate both cuisines in one dish using the ingredients commonly used in Asian cooking. It works well. Everyone is happy.
Prepare 1 whole chicken - sliced into big pieces.
Cooking Steps
Fry chicken pieces in cooking oil in large skillet in medium heat. Add just enough oil for the frying.
Turn chicken pieces over and cook until evenly brown on both sides.
Using the same skillet, reserving the oil (used earlier for frying the chicken), add onion slices, lemon grass, chopped garlic and chilli to cover top of chicken meat. Add lemon juice over the chicken meat and ingredients.
For flavor, add:-
Add 2 tbs chicken stock brand, 1 tsp salt and 1/2 tsp white pepper and some black pepper. Leave the squished lemon in the skillet to add more flavor to the chicken during the simmering.
Cover the skillet with top and leave to simmer over medium heat for 10 minutes.
When done, the chicken should have a nice brownish crispy texture, with flavoursome lemon taste.
Meanwhile, prepare blanched spaghetti noodles.
Using a large skillet, add 3 tbs cooking oil in medium heat. Add blanched spaghetti noodles to the skillet. Stir-fry briefly. Add 3 cups water, 1 tbs chicken stock brand, 1/2 tsp salt. Stir and blend in the seasonings. Remove skillet from the fire, and add chopped parsley or cilantro to the noodles.
When ready to serve, use a large serving platter, and arrange spaghetti noodles in the center and lemon chicken on the side. Scoop lemon gravies over the noodles and chicken meat.
